Yield: 2 entree sized salads

Ingredients:
1 lb. fresh baby carrots
2 T olive oil
1 T Slap Ya Mama seasoning
3 T butter
1 slice of sourdough bread – preferably the heel, cut into 1/2 inch cubes
1/4 c tasso, small diced
1 package Organic Girl’s Super Greens! or any other hearty pre-washed lettuces/greens
1/4 c green onion tops, thinly sliced
To Taste:
Parmesan cheese
Meyer lemon vinaigrette – 3 parts olive oil; 1 part Meyer lemon juice (sub. regular lemon if needed); 1 t Dijon mustard; salt & cayenne
